Caramel Apple Crisp
It’s that time of the year when you can find apples everywhere. My favorite is the Honey Crisp, but for baking I use McIntosh apples. I love apple crisp – either by itself or with ice cream on it for a special treat. I decided to play around with it by adding caramels. See what you think!
Ingredients
- 1 ½ cups quick-cook oatmeal
- ½ cup brown sugar (packed)
- ½ teaspoon cinnamon ….sometimes I use a little more
- ½ cup softened butter
- 6 cups of peeled and sliced apples – about 8 apples
- 10 caramels cut in half
Steps
Mix the first three ingredients until well blended. Then add the softened butter and work with your fingers to make the mixture into large crumbs.
Place the sliced apples in the bottom of a greased pan (I use 13 x 8). Top the apples with the crumb mixture.
Bake at 350° until bubbly – approximately 35 minutes. Take the apple crisp out of the oven and sprinkle with the caramels. Bake another 10-15 minutes, or until the caramels are melted. Serve hot or warm. If it cools the caramel gets a little chewy, you can pop in the microwave for a few seconds.
