The Detroit Tigers are headed to the World Series! In honor of this fine occasion, we decided to make cupcakes. Kraft has just come out with a new frosting – Cool Whip Frosting, so I decided to give it a try. My son and I headed out to Walmart to see what we could find. You can see our shopping trip here.
The frosting comes in three flavors; vanilla, chocolate and cream cheese. It’s found in the freezer section. I used the cream cheese flavor for this recipe and really liked it…so did everyone else! It has a really creamy and light texture with a great flavor. I used just a regular knife to frost my cupcakes, but it does hold up to piping too.
I think it makes an excellent frosting option when you’re not in the mood to make it yourself. It’s very spreadable – I don’t think it would ever tear the top of your cake off and spread the crumbs everywhere. The container has more than enough frosting for 24 cupcakes (10.6 ounces).
Here’s the recipe that I used for the cupcakes. I frosted them with Kraft Cool Whip Frosting in the cream cheese flavor. We made little toppers out of paper and lollipop sticks. The cupcake tins were the perfect color of blue for the Detroit Tigers and then I topped them off with a little orange sugar.
Recipe for the cupcakes:
Wacky Cake
Mix together the following dry ingredients:
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
½ cup cocoa (I used special Dark Cocoa)
2 cups sugar
Then add the wet ingredients
2/3 cups vegetable oil
2 tablespoons vanilla
2 cups cold water
2 tablespoons vinegar
Beat until ingredients are well incorporated.
Pour batter into a cupcake tin lined with papers.
Bake at 350 degrees for 18-20 minutes or until knife inserted in the middle comes out clean. Frost once the cake has cooled.
