As a family of six, pasta is a big part of our weekly meal plan and as a mom I am continuously trying to make healthy, well balanced meals for my children.

I was sent some Mueller’s 100% whole grain pasta to try along with a Cuisinart Chef’s Classic Stainless Steel 4 Piece 12 Quart Pasta Steamer set.  This was not the first time my family had tried Mueller’s Whole Grain Pasta.  I have purchased it previously and love that my kids love it just like any other pasta and at the same time they are getting a pasta that is better for them!  Score for mom in the yummy tasting, healthy feeding department!

With summer upon us and BBQ dinners a big part of our summer meal plan, I decided to make our usual BBQ side of macaroni pasta with Mueller’s 100% Whole Grain Pasta as a healthy alternative.  As I suspected. the whole family enjoyed their pasta salad like they normally do and again mom scored!  I silently gave myself a pat on the back for doing good for my family.

I also enjoyed the Cuisinart Stainless Steel 4 Piece 12 Quart Pasta Steamer Set!  Not only is it beautiful, but as I learned from a manufacturer of kitchen utensils, stainless steel is the best way to go when it comes to pots and pans.  If you take care of it, it will be good to you, last a very long time and cook your food properly and evenly.  All of these are very important features when I shop for pans!

Macaroni Salad Recipe

Ingredients

  • 4 cups uncooked Mueller’s 100% Whole Grain elbow macaroni
  • 4 hard boiled eggs
  • 1 cup Helmann’s Olive Oil mayonnaise
  • 2 1/2 tablespoons prepared yellow mustard
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1/4 cup chopped carrot
  • 1 8 oz can black olives, sliced

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  2. In a large bowl, mix together the mayonnaise, mustard, salt and pepper. Stir in the onion, celery, carrot,black olives,  eggs and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

I try and put some Italian Dressing or small amount of cheese on my childs Healthy food they never know the difference…(most of the time)

I actually don’t sneak in healthy stuff, my kids know they HAVE to eat what they are served. I try to balance it with fun snacks and dessert too.

I don’t have any children at home right now, but I’ve found that sneaking veggies into anything with cheese or a cheesy casserole is super easy and the kids gobble them right up.

My little one loves her veggies so I don’t have to do too much! but I was horrible about that when I was little and my Mom would cut veggies into cute shapes and tell me stories to get me to eat them…it did work with me!

Our 8 year old grandson is a fairly adventurous eater, but we do try to sneak some extra veggies into him. I’ve mashed steamed cauliflower into mashed potatoes 🙂 I’ve found that he likes veggies much better if I saute them in a little olive oil with a tiny bit of butter and season them, so that’s how I usually cook vegetables now.

Yes , I have the honor and privilege of sneaking healthy items into my kids meals. Im able to achieve this darling feat by adding various fruit/vegetable puree to my recipes. Example… banana/sweet potato puree mixed into French toast. Yummy. For those suspicious kiddos wondering hey what are those”things” on their whole grain bread. I’ve found a shaker for confectioner’s sugar to be my best friend! It helps camouflage “those things” by adding a dusting of sugar. Lol

My secret for sneaking healthy items into my son’s meal is by chopping up veggies like carrots and the like and combining them into a recipe. I have been added finely shredded carrots into our meatloaf for years now. 🙂
