Leave it to me to mess around with Waldorf salad – a classic salad recipe. Typically the celery is blanched first – I didn’t cook anything. The normal dressing, at least the ones I’ve had, contain mayo. I put a spin on the recipe by using yogurt in place of the mayo and adding a touch of cinnamon. This recipe is a great way to use fresh crunchy apples in the fall and winter. So simple, so good!
Ingredients:
4-6 crunch apples – I use Honeycrisp apples
1 cup diced fresh celery
3/4 of a cup of crumbled walnuts
1 tablespoon fresh lemon juice
1 eight ounce container or plain or vanilla yogurt
1/2 teaspoon cinnamon
fresh ground black pepper
Directions:
Dice the apples and celery into bite size pieces, toss with the lemon juice. Place the apples, celery and walnuts in a medium size bowl. Make the dressing by combining the yogurt and cinnamon (mix well). Toss the dressing and apple mixture to coat. You may only want to use part of the dressing, depending on thick of a coating you want. Add the fresh ground black pepper.
