Inspired by a co-workers egg salad, we tried this recipe for spicy avocado chicken wraps for the first time and it turned out just as I thought…simple and delicious! Instead of using mayonnaise in her egg salad, she used way-better-for-you avocado.
We took leftover grilled chicken breasts from dinner and we chopped them up and mixed them with avocado to turn them into Spicy Avocado Chicken Salad Wraps! We used all our leftover chicken and made a delicious, good-for-you, simple meal!
Ingredients:
2 Grilled Chicken Breasts
2 Ripe Avocados
Sriracha Sauce
Sea Salt and Pepper
Garlic Powder
4 Shallots Green Onion
Romaine Lettuce
Spicy Avocado Chicken Salad Wrap Recipe:
For this recipe use cold previously grilled chicken. Chop the chicken up into small cubes and place them in a large bowl.
Cut your avocados in half, remove the seeds and skin. Mash the avocado and add to the chicken in the large bowl.
Mix chicken and avocado together and add chopped green onion.
Finally add sea salt, pepper and garlic powder to taste. Scoop the avocado chicken salad onto a piece of washed and dried romaine lettuce. Top with Sriracha sauce. Enjoy!
