Rich Carrot Bundt Cake with M&M’s® Carrot Cake
This is the dessert that I plan on bringing to our family Easter gathering this year. One of the reasons I love Carrot Cake is because you can customize the batter with different “add-ins”. You can add nuts, coconut, raisins, or pineapple to make it just the way your family likes it. Another huge reason to love this recipe is that you can create a pretty cake with minimal decorating – just top it off with a vanilla frosting and these new M&M’s® Carrot Cake. You could also tint the frosting a pale orange or green if you like.
My son and I love tasting all the great festive flavors of M&M’s® and these got two thumbs up from us!
They come in beautiful pastel colors of orange and green, that are perfect for Easter desserts – or filling up your candy dish! You can bake the cake ahead of time but I would wait until the day you are serving it to frost and decorate.
Ingredients:
Cake
2 cups flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground cloves
2 teaspoons cinnamon
20 ounces can crushed pineapple drained
3 large eggs
¾ cup buttermilk
1 ½ cup sugar
½ cup vegetable oil
2 teaspoons vanilla
3 tablespoons pineapple juice
2 cups finely shredded carrots
Frosting
2 cups powdered sugar
1 tablespoon milk
1 teaspoon soft butter
½ teaspoon vanilla
½ cup M&M’s® Carrot Cake
Instructions for Cake:
Preheat oven to 350º degrees and butter or use non-stick spray to prepare your bundt pan.
Drain the pineapple keeping 3 tablespoons for the batter
Mix all the dry ingredients in a medium bowl (flour, soda, salt, cloves and cinnamon)
Mix together all the remaining ingredients except the carrots – I used a hand mixer (pineapple, eggs, buttermilk, sugar, oil, vanilla, pineapple juice)
Don’t over mix – just until all the ingredients are incorporated.
Fold in the shredded carrots and pour batter into the prepared bundt pan
Bake 45 – 55 minutes until a knife inserted in the middle comes out clean.
Cool on a wire rack.
Instructions for Frosting
Once the cake has cooked turn it out on to a pretty cake plate
In a small bowl combine the powder sugar, milk and butter
Stir until super smooth and shiny
Stir in the vanilla
You want this frosting to not be too stiff so that it will run down over the cake but on the other hand you don’t want it to all run down on the cake plate either. If you need to make it thicker just add more powder sugar, if it’s too stiff add more milk just a little at a time until you get the consistency you want.
Using a spoon put the make a ring around the top of the cake with the frosting – go closer to the outside edge so that it will run over the sides
Sprinkle the M&M’s® randomly around the top of the cake – make sure you do this before the frosting sets up.
If you ask me this would be the perfect way to end your Easter meal!
