I really like the website Pinterest (who doesn’t?). I have no problem pinning all kinds of yummy recipes, but rarely actually make them. I made a seven layer greek dip for Christmas that turned out to be quite delicious and recently started revisiting the slow cooker recipes I had pinned.
I decided to try Crock Pot Chicken Enchilada Soup.

I thought the soup turned out really well. I omitted the green peppers, and added salt and pepper and about ½ can of extra black beans. I also added avocado to the toppings, in addition to shredded cheese, sour cream and cilantro. Here is the link to the recipe
